Day 1 – PORTLAND

Arrive at Portland International Airport (PDX)

Surrounded by spectacular natural beauty, Portland offers visitors a creative journey through its eclectic arts, music, culinary and outdoor scenes, all set against the majestic backdrop of Mt. Hood. Reinforced with a thriving maker community, DIY drive and a passion for sustainability, Portland has an urban buzz waiting to be explored through every season.

Check in at The Heathman Hotel

One of Portland’s most recognizable landmarks, the iconic Heathman Hotel blends rich history with a reverent appreciation for the arts. A cultural fixture since the day it opened in 1927, the hotel balances its vibrant past with Provenance Hotels’ modern sense of hospitality. Recent renovations highlight its one-of-a-kind library, and reaffirm the hotel’s role as a welcome respite for the creative, artistic set in Portland, as well as for visitors from around the globe. Lunch at Higgins

Chef Greg Higgins, a founder of Portland’s “farm to table” cuisine, focuses on locally sourced and organically grown herbs and produce while incorporating traditional French cooking styles and other international influences into his menu. Situated in a historic building, even the restaurant’s pressed-tin ceiling and polished wood floors were inspired by classic French bistros. Higgins, an early supporter of the Portland Farmers Market and local growers, changes his menu weekly to reflect what’s in season. Lunch menu here.

Tasting at Freeland Spirits (NW Portland)

Native Texan Jill Kuehler opened Freeland Spirits, the state’s first women-owned and run distillery, in December 2017. The brand launched with its signature teardrop-shaped bottles of small-batch gin, distilled in a traditional copper pot with 13 different dried botanicals (including pink peppercorn, coriander and star anise). In November 2018, Freeland Spirits debuted its first whiskey, made in charred oak barrels and pinot noir barrels from the Pacific Northwest. The distillery offers superb spirits and seasonal cocktails as well as curbside pick-up and local delivery.

Here, Molly Troupe, Master Distiller, was born wearing a pair of chemist goggles and never took them off. With a background in biochemistry and a Masters Degree in Distillation from Heriot Watt in Scotland, Molly commands perfection with every spirit she orchestrates.

Neighborhood Exploration: NW 23rd/Nob Hill

Located at the base of Portland’s West hills, Nob Hill is also known simply as “Northwest Portland.” Turn-of-the-century Victorian homes line the narrow streets, offering visitors a glimpse into the city’s rich architectural past. Storefronts have been restored, transforming Northwest 23rd Avenue into a shopper’s haven. Eclectic, whimsical and sophisticated boutiques offer everything from tiaras to topiaries. Restaurants, pubs and cafes, many of which open to the street in warmer months, offer perfect vantage points for some of the city’s best people-watching.

Stop at Roots & Crowns – This small batch apothecary is owned by Max Turk, who identifies as a Jewish Queer Plant Witch. The shop includes a line of tea blends catering to different needs. Max’s Instagram always has the most beautiful drinks (tea and otherwise) on the feed. 

Tea Chai Té: A Portland staple for tea drinkers for more than 18 years featuring more than 100+ handcrafted varieties, organic herbal medicinals, chai blends from scratch and more. Fun fact: Their location in the Sellwood neighborhood in Portland is housed in a historic Caboose. 

Snow Peak: Since 1958, the Japanese-based company has designed, lifetime-guaranteed outdoor products with a core mission to create restorative experiences in nature through legacy-grade gear and apparel all through a commitment to outdoor advocacy and sustainability. Living the belief that the outdoors are an antidote to the stresses of modern life, and provides an opportunity to reconnect with each other and ourselves.

Fireside: Fireside is a neighborhood bar and restaurant that serves “outdoor-inspired” cuisine: think campfires, backyard bbqs, and picnics. Using an array of small, local, organic farms and ranches, they have created a menu that is grill-focused, and comfort driven, with a careful eye on technique and quality ingredients. Paired with well-crafted cocktails, interesting wines, and thirst quenching beers from Oregon and abroad we invite you to come see what we have to offer.

Aria Gin: Award-winning craft small-batch bottles of gin using ten ingredients, including juniper, coriander, cardamom, lemon peel and angelica root. Visit the tasting room to sample it plain or mixed into a delicious cocktail. Hours: 12-6pm.

Chef’s Tasting Menu at República in the Pearl District

For about two years, La Perlita in Portland’s Pearl District enlivened the locally loved Ecotrust building with Mexican mochas artfully enhanced with cocoa nibs and dustings of pastel freeze-dried fruits. As the pandemic hit, La Perlita pivoted to a wildly successful pop-up model for local chefs. Now—just steps away from La Perlita—República has opened as a permanent restaurant made possible by a collaboration between participants of the La Perlita pop-ups. In the morning and afternoon, República serves guisados and quesadillas made from blue corn masa. In the evening, the menu quick changes to a buzzy wine and dessert bar with wines from Latinx winemakers (as selected from local winemaker Cristina Gonzales).

Day 2 – PORTLAND

Breakfast at Cafe Olli

We’ll try out the new Cafe Olli, recently opened, employee-owned spot serving seasonally focused, locally sourced dishes. 

Tour with Growing Gardens

Growing Gardens farm tour at Mariquita Medicinals in NE Portland. 

Growing Gardens is a local nonprofit organization dedicated to using the experience of growing food in schools, backyards and correctional facilities to cultivate healthy, equitable communities. 

Stop by Cultured Kindness

Cultured Kindness  specializes in plant-based, dairy free vegan cheeses.

Spirit Tasting at Westward Whiskey

In a 1.5-mile (2.4 km) stretch of Portland’s Central Eastside known as Distillery Row, you can tour production facilities, taste various spirits and buy bottles to stock your home bar. Westward Whiskey is a leader of America’s craft distilling resurgence, and the anchor of Portland’s famous distillery row. Its award-winning products are batch-distilled with an intense, passionate, near-obsessive pursuit of quality using ethically sourced ingredients. Its spirits include Westward Oregon Straight Malt Whiskey, Volstead Vodka, Krogstad Aquavit and a line of limited release small-batch spirits. Enjoy tasting a variety of spirits and mini cocktail made with local ingredients.

Lunch at Fermenter

Farm Spirit’s casual offshoot, Fermenter cafe serves a menu of daily rotating dishes featuring house-fermented vegetables and vinegars. Capturing the Farm Spirit, well, spirit, with a completely vegan menu sourcing ingredients from within 105 miles of the restaurant.

Per website: From beer and wine to bread and kombucha, all of our favorite foods are fermented and cultured. Think where we’d be without fermentation! No Kimchi? No Cheese? No Wine or Sake? No thank you. We specialize in fermentation from a fully plant-based perspective. We make tempeh, koji, kombucha, cheeses, and more all by hand utilizing only the best local vegetables, legumes, and grains. 

Swing by Mama Dút

Vegan Vietnamese Beef Stew

Mama Dut, a Vietnamese pop-up turned brick-and-mortar in November 2020, serves dishes centered around owner Thuy Pham’s house-made vegan pork belly and fishless fish sauce wings are among the dishes that sell out early. 

Side Yard Farm and Kitchen

Founded by farmer and Chef Stacey Givens, Side Yard Farms (located in Portland’s NE Cully neighborhood) started as small plot farming in 2009 and has grown into a successful operation feeding upwards of 15,000 people per year through restaurants, Community Supported Agriculture (CSA) boxes, donations, catering, and farm events from workshops, farm events, dinners & brunches, grief groups, farm tours, BIPOC & Queer Farmers Markets, and more. Givens’ mission remains committed to fostering community resilience and providing a safe and inclusive space for all identities.

The Side Yard farm is launching Lil’ Campers this summer. Lil’ Campers is a seed to plate teardrop trailer rental company based in Northeast Portland (just 10-15 minutes from the PDX Airport). Aimsir Distilling Co. (Kerns Neighborhood)

Aimsir Distilling Company, opened December 2020, makes gin and whiskey (including a cold brew bourbon) and serves a full cocktail menu in a beautiful, visually stunning space in the Kerns neighborhood. A little bit about the owners/ inspiration: United by a shared love of spirits and a commitment to continually pursing a better way, Steve and Christine’s Aimsir journey began in Portland, Oregon, in 2016, the same year their son Eamon was born. Their beautifully designed Art Deco inspired tasting room opened in 2020, the same year their daughter Vesper was born. Together, their family sees Aimsir as a tribute to their family’s Irish heritage, a way to cultivate community, a chance to bring people together, and a brand new frontier for exploration.

Black Tie Tours

Black Tie Tours is now offering truffle hunting tours on a limited basis. Tromp around the Oregon wilderness with Stefan and his truffle dog, Ella. They will demonstrate how they work together to unearth the native Oregon truffle. You will learn truffle hunting do’s and don’ts, storage and care of truffles and how to use those delicious little nuggets in your own kitchen. You can even take some home with you!  

Check in at Tabula Rasa Farmhouse

The Farmhouse sits atop a hill overlooking the lush pastures of Tabula Rasa Farms in Carlton, Oregon. This is an actual working farm and a thought leader in the regenerative agriculture movement so don’t be surprised if you see cows grazing in the fields while relaxing on the deck.

The space

The Farmhouse was designed by your host to flood the spacious open floor plan with light and a feeling of connection with the land that surrounds it. The pastoral views are stunning. The modern décor has a Scandinavian influence, high ceilings, a wood fired stove, two separate master suites and fully equipped gourmet kitchen. The artwork throughout brings a unique warmth and colorful grounding to the space. Did I mention your host is an artist who made the jump to farmer?

The large deck is equipped with a grill and has both covered and uncovered sections. Just outside your front door is a pond, one of the many permaculture features on the farm and a favorite gathering place for wildlife. Enjoy the sweet songs of the birds and gentle chirping of frogs while sipping some local wine on the deck. A minute away you’ll find our Farm Stand stocked with unique local items, gifts and a variety of meats and wines.

Dinner at Cuvée

Chef Gilbert, Carlton’s culinary jewel and the creator of Cuvée’s authentic french cuisine, consistently treats his guests to a top-notch full course experience. At Cuvée, fine dining and country charm coalesce into a feast for all of the senses.

Day 4 – WILLAMETTE VALLEY

Verdant tasting menu lunch

We are excited to launch Verdant as an opportunity to provide a different, and more elevated tasting and culinary experience at Abbey Road Farm. Items will be from our garden and the property as much as possible and drawing inspiration from the grounds and surrounding areas. Guests will enjoy a seasonal, 6-course menu with wine paired from the Abbey Road Farm collective.

In this intimate lunch, guests will have a chance to meet our Chef, Will Preisch and kitchen team as they present each course and our wine experts will explain each pairing! Lunch will be served in our newly updated Cellar Room with plenty of parking in our main parking lot.

The Silo Suites B&B are housed in three grain silos; two were working silos on the property and a third one was added to complete the project. Five suites are complete with foam topped beds, Jacuzzi tubs, luxurious bedding and ambient floor heating. The suites also boast a grand entry and sitting area with wet bar. Your stay will be complete with one of the best breakfasts in Oregon prepared by our on-site Chef.

Day 5 – OREGON COAST

Depart Willamette Valley for the Tillamook Coast.

We cared for our farmer-owners, who cared for the land, which sustained healthier cows, which provided better milk. And better milk made better dairy products. It’s a simple recipe that we’ve followed for over a century and it has never failed.
